No-Noodles Lasagna - THM Delish!

No-Noodles Lasagna

Sauce (recipe below)
2 C ricotta cheese (or cottage cheese)
2 C shredded mozzarella cheese
4-6 sliced zucchini (thinly sliced long ways like lasagna noodles)

Sauce:

1 large onion chopped
6 cloves garlic, chopped
1 32 oz can no-sugar tomato sauce or crushed tomatoes
1# ground beef
1 T oregano
1 sprig of rosemary
½ C apple cider vinegar

In a large pot, sauté onions and garlic in 1 T olive oil until well done – you won’t want crunchy onions in this. J In a smaller pot, sauté ground beef and add 1 teaspoon salt to taste. Once done, drain grease and add to sautéed onion/garlic mixture. Add tomato sauce, oregano, rosemary, AC vinegar and cook 15 or 20 minutes until flavors are well mixed. In a bowl, mix up both cheeses and set aside.


Line pan with half sauce/meat mixture, lay sliced zucchini across the top of meat mixture, layer the cheese mixture, and then another layer of zucchini, top with rest of sauce and spread it all over the zucchini. Cover with aluminum foil and bake for 40 minutes at 350. Enjoy!

The whole family enjoyed this and not one of us missed the pasta!
I served it with a salad for more veggies.
